			<content:encoded><![CDATA[<p>Economy, economy, economy!  In our election cycle that we have just survived, economy was a word we heard constantly.  And the reality is, we are in an economic squeeze.  So most of us are looking for ways to prepare more meals at home.  But in our busy society, these meals need to be not only economical but also quick and easy.  Here are some recipes that should fill that need.  Easy Taco Dinner is just what the name implies.  It is a tasty, easy, quick, taco tasting meal.  Want a vegetable to go with it?  Give these Corn Stuffed Golden Baked Peppers a try.  And how about Caramel Apple Walnut Squares to finish off your meal?  Delicious! </p>
<p> EASY TACO DINNER </p>
<p>This was on an old newspaper clipping in my mother&#8217;s recipe box. I have no idea where she got it. But it is good and easy, as the name states.1 lb ground beef1 large onion, chopped1 envelope (1 1/4 oz) taco seasoning mix1 cup water1 pkg (12 oz) tortilla chips1/2 head lettuce, shredded2 med tomatoes, chopped1 can (2 1/4 oz) sliced ripe olives, drained1 cup shredded Cheddar or Monterey Jack cheese (about 4 oz)2/3 cup sour creamCook and stir ground beef and onion in a 10-inch skillet until beef is light brown, drain well. Stir in seasoning mix and water. Heat to boiling; reduce heat. Simmer uncovered, stirring occasionally, 10 minutes. Spoon beef mixture onto the chips. Top with the remaining ingredients. </p>
<p>Serves 6. </p>
<p>CORN STUFFED GOLDEN BAKED PEPPERS </p>
<p>I believe this is another recipe from an old 1970s &#8220;The Workbasket&#8221; magazine.3 green bell peppers, cut in half vertically1 jar (5-oz) sharp pasteurized process cheese spread1 3/4 cups whole kernel corn, drained1 tomato, chopped1 cup soft bread crumbs2 tbsp butter, meltedRemove seeds from peppers then parboil for 5 minutes. Drain. Heat cheese spread in a saucepan over low heat; stir in the corn and tomato. Divide corn filling between the 6 pepper halves. Toss bread crumbs with butter and use to top the corn filling. Bake at 350 degrees for 30-35 minutes. </p>
<p>CARMEL APPLE WALNUT SQUARES </p>
<p>I believe this recipe was cut from a magazine advertisement for Borden&#8217;s Eagle Brand Milk.1 3/4 cups unsifted flour1 cup quick cooking oats1/2 cup firmly packed brown sugar1/2 tsp baking soda1/2 tsp salt1 cup cold margarine or butter1 cup chopped walnuts20 caramels, unwrapped1 (14-oz) can Borden&#8217;s Eagle Brand Sweetened Condensed Milk1 (21-oz) can apple pie fillingPreheat oven to 375 degrees. In large bowl, combine flour, oats, sugar, baking soda, and salt; cut in margarine until crumbly. Reserving 1 1/2 cups of crumb mixture, press remainder on bottom of 13&#215;9-inch baking pan. Bake 15 minutes. Add walnuts to remaining crumb mixture. In a heavy saucepan, over low heat, melt caramels with milk; stirring until smooth. Spoon apple filling over prepared crust; top with caramel mixture then reserved crumb mixture. Bake 20 minutes or until set. Cool. Best served warm with ice cream! </p>

			<content:encoded><![CDATA[<p>Chewy &amp; Soft Choco Chip Cookies Made Real Easy! </p>
<p>Choco-chip cookies are a much-loved treat and making them is really something that you should take the time to learn. These cookies are either crunchy, soft or etc. </p>
<p>Making these soft choco-chip cookies might seem a very hard challenge but I assure you it isn&#8217;t. Just take note of a couple of steps in making your cookie batter. </p>
<p>Normally an easy &amp; good choco-chip cookie recipe would be the standard ones placed at the back portion of those choco chip packages. For your dough, just be sure to thoroughly mix the butter and sugars using your electric hand-held/ordinary mixer until dough is quite fluffy. Watch out for lumps of sugar &amp; butter then be sure that they are already gone before adding in your vanilla and eggs. </p>
<p>These first few steps are crucial to getting those soft cookies. Don&#8217;t beat your batter together with eggs otherwise they might not become airy &amp; fluffly. Just incorporate all ingredients until they are mixed together. Be careful not to overbeat your dough. </p>
<p>Next, into another bowl, combine salt, baking soda &amp; flour together then mix them using your spoon then sift afterwards. If recipe requires flour (sifted) then be sure to sift your flour. After sifting, you stat adding in flour mix to your wet recipe ingredients until everything is incorporated well &amp; add your choco chips. </p>
<p>Place your dough inside the refrigerator for around 2 hrs or better if overnight. When baking, preheat yor oven first before actual baking process. Roll out dough in 2-inch round shapes then place them 2-inches away from each other on your greased baking/cookie sheet. Be sure your sheet isn&#8217;t warm when you arrange your cookies onto it. You could even place it inside your fridge prior to baking. </p>
<p>Then, bake your cookies as per directions until they appear light golden and browned. But make sure cookies aren&#8217;t darkly browned or they might be crunchy and a bit hard. Be careful when cooking so you will get those lovely soft cookies and not the hard &amp; crunchy ones. Take note of the steps above and for sure you will get those soft chewy cookies. </p>

			<content:encoded><![CDATA[<p>Chewy &amp; Soft Choco Chip Cookies Made Real Easy! </p>
<p>Choco-chip cookies are a much-loved treat and making them is really something that you should take the time to learn. These cookies are either crunchy, soft or etc. </p>
<p>Making these soft choco-chip cookies might seem a very hard challenge but I assure you it isn&#8217;t. Just take note of a couple of steps in making your cookie batter. </p>
<p>Normally an easy &amp; good choco-chip cookie recipe would be the standard ones placed at the back portion of those choco chip packages. For your dough, just be sure to thoroughly mix the butter and sugars using your electric hand-held/ordinary mixer until dough is quite fluffy. Watch out for lumps of sugar &amp; butter then be sure that they are already gone before adding in your vanilla and eggs. </p>
<p>These first few steps are crucial to getting those soft cookies. Don&#8217;t beat your batter together with eggs otherwise they might not become airy &amp; fluffly. Just incorporate all ingredients until they are mixed together. Be careful not to overbeat your dough. </p>
<p>Next, into another bowl, combine salt, baking soda &amp; flour together then mix them using your spoon then sift afterwards. If recipe requires flour (sifted) then be sure to sift your flour. After sifting, you stat adding in flour mix to your wet recipe ingredients until everything is incorporated well &amp; add your choco chips. </p>
<p>Place your dough inside the refrigerator for around 2 hrs or better if overnight. When baking, preheat yor oven first before actual baking process. Roll out dough in 2-inch round shapes then place them 2-inches away from each other on your greased baking/cookie sheet. Be sure your sheet isn&#8217;t warm when you arrange your cookies onto it. You could even place it inside your fridge prior to baking. </p>
<p>Then, bake your cookies as per directions until they appear light golden and browned. But make sure cookies aren&#8217;t darkly browned or they might be crunchy and a bit hard. Be careful when cooking so you will get those lovely soft cookies and not the hard &amp; crunchy ones. Take note of the steps above and for sure you will get those soft chewy cookies. </p>

<p>The cookie history was traced during the seventh Century in Persia. But during the 1800&#8242;s, cookie recipes started to get published on cook books. However, the name used was small or tiny cakes. The name cookies actually came from this Dutch term: koekje/koekie which denotes small or tiny cakes. </p>
<p>During the first part of 1900s until today, recipes for making cookies vary in flavors and styles. These little bites of sweetness are usual goodies baked inside one&#8217;s kitchen, and it is assessed that 50% of the entire homemade cookies were choco-chips. </p>
<p>However, there are numerous tasty cookie flavors which have not yet been tested or baked at homes. Cookie recipes on cook books are categorized according to their manner of preparation and cooking. The five cookie recipe categories are as follow: </p>
<p>1. Drop Cookies: This is one of the usual categories of home-baked and yummy cookies. It is prepared and baked by pressing and dropping the dough or cookie mixture from your spoon down to the parchment or wax paper. This type is actually easy to bake. You just combine all the ingredients, scoop, drop and cook. The famous examples are peanut spread , choc-chip cookies and oatmeal cookies. </p>
<p>2. Cookie Bars, Squares/Pan Cookies: These are probably the simplest and the easiest cookie recipe. You surely can make it without dropping a sweat. The cookie mixture is placed inside a container or mold and then sliced in small sizes right after cooking. Brownies fall in this category even if it&#8217;s a batter cookie and it has many variations. </p>
<p>3. No-Bake Cookies: This category does not need any oven. It is one of the best ways to familiarize children to baking. Among the known samples of this type are krispies, coconut-date balls, peanut spread/butter squares/bars and rum rounds or balls. </p>
<p>4. Shaped Cookies: This cookie category is usually designed and molded by hands. Shortbreads and spritz cookies are samples of shaped cookies. </p>
<p>5. Ice Box/Refrigerator Cookies: This cookie is done by freezing or chilling the batter/cookie mixture before cutting and cooking/baking them. Some books classify this as the slice-and-bake cookies. Just keep small logs of your desired cookie mixtures inside the freezer or fridge, and then cut prior to baking and best eaten fresh out from your oven. This is good especially when you suddenly have cookie cravings. </p>

<p>DIABETICS CARROT BREAD </p>
<p>4 eggs </p>
<p>1 3/4 cups Splenda Granular </p>
<p>1/4 cup sugar </p>
<p>1/4 cup vegetable oil </p>
<p>1/2 cup water </p>
<p>3 cups all-purpose flour </p>
<p>2 tsp baking powder </p>
<p>1 1/2 tsp baking soda </p>
<p>2 tsp ground cinnamon </p>
<p>1/4 tsp salt </p>
<p>2 cups shredded carrots </p>
<p>Preheat oven to 350 degrees.  Spray two 9-inch loaf pans with nonstick cooking spray; set aside. </p>
<p>In a large mixing bowl, combine eggs, Splenda and sugar.  Beat at medium speed of electric mixer until the mixture thickens.  Gradually add in the oil and water; beat until well combined. </p>
<p>Combine the flour, baking powder, baking soda, cinnamon, and salt; gradually add to the egg mixture.  Stir just until moistened.  Fold in the carrots.  If batter seems too dry, add a tablespoon of water (moisture will depend on how wet or dry the carrots are).  Spoon the batter into the prepared loaf pans.  Bake at 350 degrees for 1 hour or until a wooden toothpick inserted in the center comes out clean. </p>
<p> COCONUT TEA BREAD </p>
<p>3 cups flour </p>
<p>3 tsp baking powder </p>
<p>1 tsp salt </p>
<p>1 cup Equal Sugar-Lite </p>
<p>1 1/3 cups unsweetened flaked coconut </p>
<p>1 tbsp grated orange OR lemon rind </p>
<p>1 egg </p>
<p>1 1/2 cups milk </p>
<p>1 tsp vanilla </p>
<p>Preheat oven to 350 degrees. </p>
<p>Sift flour, baking powder, and salt into large mixing bowl.  Stir in Equal, coconut and fruit rind.  Beat egg in a medium mixing bowl; stir in milk and vanilla.  Stir milk mixture into dry mixture and mix just until mixed well and moistened.  Do Not beat.  Spray a 9-inch loaf pan with vegetable oil spray.  Pour batter into pan and bake for 1 hour and 10 minutes at 350 degrees. </p>

			<content:encoded><![CDATA[<p>Now that winter has set in and with it the long, cold, often rainy or snowy days, it is time to warm your home and hearth with some delicious baked goods.  Here is a good selection of recipes from my vintage collection that would be perfect to make with the kids or just by yourself to share later.  The Applesauce Raisin Muffins would make good after-school treats, lunchbox items, or breakfast treats with a hot drink and some yogurt for protein.  The mint cookies are great to make with the kids and they remind you of the famous Girl Scout Mint Cookies.  The Lacy Oatmeal Wafer Cookies are Swedish cookies known as Havreflarn in Sweden.  They are easy but fancy.  How about letting the kids help you make Homemade Granola Bars they can have as treats or take in their lunchboxes.  Kids love eating something they helped to make.  So get out the flour, sugar, etc, don an apron and get started on that baking! </p>
<p>HOMEMADE GRANOLA BARS </p>
<p>3 1/2 cups oats1 cup walnuts, chopped1 cup raisins2/3 cup butter, melted1/3 cup honey1 egg, beaten1/2 tsp vanilla1/2 tsp salt1/2 cup firmly packed brown sugar1 can cherry pie filling </p>
<p>Spread oats in a jellyroll pan and toast in a 350 degree oven for 15 to 20 minutes, stirring occasionally. In a large bowl, mix oats, nuts, and raisins. Melt butter in saucepan. Add honey, egg, vanilla, salt, brown sugar, and pie filling. Stir into oat mixture. Press firmly into greased jelly roll pan. Bake 25 to 30 minutes at 350 degrees. Cool, cut into squares. </p>
<p>QUICK AND EASY MINT COOKIES </p>
<p>This recipe was passed out at a Christmas Open House at a local flower shop in Southern Indiana years ago. These cookies are very simple and they will remind you of the &#8220;Girl Scout&#8221; Mint Cookies.Melt 1 pound semisweet chocolate coating. Add 6 drops of oil of peppermint flavoring and mix well to blend. Dip Ritz crackers till well coated and place them on a waxed paper lined cookie sheet to set. Store in an airtight container and keep in a cool place until ready to serve. </p>
<p>LACY OATMEAL WAFER COOKIES </p>
<p>This is a cookie recipe from Sweden. It is known as Havreflarn in Sweden.Preheat oven to 375 degrees. </p>
<p>1/2 cup butter1/4 cup sifted all-purpose flour1/2 cup sugar3/4 cup quick-cooking oats2 tbsp cream </p>
<p>Melt butter in a medium saucepan. Add flour, sugar, oats, and cream. Cook, stirring constantly, just until mixture starts to bubble. Remove from the heat and stir briskly for a few seconds. Drop by rounded tablespoonfuls about 4-inches apart onto well greased and lightly floured baking sheets. Place only 5 or 6 cookies on a baking sheet at a time. Bake at 375 degrees five to six minutes until golden brown. Cool wafers for 2 minutes on baking sheet. Remove carefully from baking sheet with a thin spatula and place over rolling pin until firm. If cookies harden before they can be removed from pan, reheat in oven for a few seconds to soften again. Makes about 2 1/2 dozen. </p>
<p>APPLESAUCE RAISIN MUFFINS </p>
<p>1 large egg </p>
<p>2 tbsp vegetable oil </p>
<p>1 1/2 cup unsweetened applesauce </p>
<p>2 cups flour </p>
<p>3/4 tsp baking soda </p>
<p>2 tsp baking powder </p>
<p>1/2 tsp nutmeg </p>
<p>1/2 tsp cinnamon </p>
<p>3/4 cup raisins </p>
<p>Beat together the egg, oil and applesauce.  Add flour, baking soda, baking powder, nutmeg, and cinnamon; beat well.  Stir in raisins.  Spoon batter into oiled and floured muffin tins.  Bake at 375 degrees for 20 to 25 minutes or until firm to the touch and browned.  Cool on wire racks.  Delicious topped with cream cheese! </p>
<p>Note:  This is a soft and spicy muffin.  Very good. </p>
