If you love chocolate cake you need to add this Chocolate Spice Cake to your recipe collection as one can never have too many chocolate cake recipes. This cake is different because of the spices–just enough to make it special without being overpowering. Surprise your family and friends with this different chocolate cake. It’s up to you whether or not to give away your secret for this delicious cake. We won’t tell what spices it contains or that it is moist because of the applesauce! This cake is just as yummy as a glazed Bundt cake or as a frosted sheet cake.CHOCOLATE SPICE CAKE1 3/4 cups unsifted all-purpose flour1 3/4 cups sugar1/3 cup cocoa2 tsp baking soda1 tsp cinnamon1/2 tsp nutmeg1/4 tsp allspice1/8 tsp salt1 1/2 cups applesauce1/2 cup milk1/2 cup butter, melted1 tsp vanilla extract1/2 cup raisins1 cup chopped nuts, optionalVanilla glazeIn a large mixing bowl, combine flour, sugar, cocoa, baking soda, cinnamon, nutmeg, allspice, and salt.

We diabetics enjoy sweets, too! So here is a tasty spice cookie recipe that is suitable for most diabetics. You should be aware of what you can eat if you have been diabetic for a long period of time. These Spice Cookies do have some molasses in them so eat them accordingly. One or two after a meal should be fine. But do not sit down and eat a half dozen before going to bed. Use some common sense or rather some diabetic common sense. If you are a newly diagnosed diabetic who is still learning what your body will and will not tolerate, try one or two cookies and see how your next blood sugar reading has been affected. It is all trial and error for awhile.

SPICE COOKIES

6 tbsp vegetable shortening

6 tbsp unsalted butter

1 cup Splenda granular

1/4 cup egg substitute

1/4 cup molasses

2 cups all-purpose flour, sifted

3/4 tsp ground ginger

1 tsp ground cinnamon

1/2 tsp ground cloves

In a large mixing bowl, mix together shortening, butter, sugar substitute, egg substitute and molasses. Put flour and spices into a flour sifter and sift into shortening mixture. Stir to form dough. Wrap dough in plastic wrap and chill in refrigerator until firm, approximately 2 hours.

Preheat oven to 350 degrees. Remove dough from refrigerator. For dough, roll 1 heaping teaspoon at a time, into balls. Place balls on an ungreased cookie sheet and pat down gently with a fork, making a criss-cross pattern as you would for peanut butter cookies. Bake for 10-12 minutes. Do not overbake. These cookies will look chewy but will crisp up as they cool. Cool on a wire rack.

Enjoy!

Chocolate I am a chocoholic as I know many of you are. I love chocolate pie but I especially love specialty chocolate pies. If you want to enjoy pies that are as good as what you could buy at a special bakery, try these recipes. Joseph’s Chocolate Pecan Pie is just simply delicious. Chocolate and pecans are two of my favorite things. Combined, they are irresistible! And who can resist hot fudge? Turtle Pie? Did I die and go to Heaven?

JOSEPH’S CHOCOLATE PECAN PIE

3 eggs, slightly beaten1 cup dark corn syrup1 (4-oz)squares of semisweet chocolate, melted and cooled1/3 cup sugar2 tbsp butter, melted1 tsp pure vanilla1 1/2 cups chopped pecans1 unbaked 9-inch pastry shell

Preheat oven to 350 degrees.

In a large mixing bowl, stir together the eggs, corn syrup, chocolate, sugar, butter, and vanilla until well blended. Stir in pecans and pour mixture into the pastry shell. Bake at 350 degrees for 50 to 60 minutes.

HOT FUDGE PIE

1/2 cup butter3 (1-oz each)squares unsweetened baking chocolate4 eggs3 tbsp white corn syrup1 1/2 cups sugar1/4 tsp salt1 tsp vanilla1 9-inch unbaked pie shell

Melt butter in top of a doubler boiler and add the chocolate. Continue to melt mixture until chocolate is melted; stir to combine well. In a medium mixing bowl, beat eggs until light. Beat the corn syrup, sugar, salt, and vanilla into the eggs. Add a small amount of the chocolate mixture to the egg mixture and mix well to temper the eggs. Add the remaining chocolate mixture and mix well. Pour the mixture into the pastry shell and bake in a 350 degree oven for 25 to 35 minutes or until the top is crusty and the filling is set but still somewhat soft. Do not over-bake, the filling should be like a custard. Serve warm with vanilla ice cream for a real treat!

CHOCOLATE TURTLE PIE

1/4 cup caramel dessert topping (ice cream topping)1 Chocolate Crumb Ready Pie Crust1/2 cup chopped pecans2 pkgs (4-serving size each) Chocolate Cook and Serve Pudding/Pie Filling Mix3 cups milkwhipped cream

Spread the caramel topping on the bottom of pie crust. Sprinkle the pecans over the caramel. Refrigerate.

Meanwhile, in a medium saucepan, stir the pudding mixes into the milk. Stirring constantly, over medium heat, cook until mixture comes to a full boil. Remove from the heat. Allow to cool for 5 minutes, stirring twice. Pour mixture into the crust. Place plastic wrap over the top. Refrigerate for 3 hours or until set. Garnish with whipped cream drizzled with more caramel topping. Refrigerate leftovers.

Enjoy!

I was born and raised in Indiana where there are still many old order Amish in the area. In fact my father hired the Amish to build our family home and my sister-in-law sells Amish furniture in her store. I came to love and respect them and especially their cooking. They sure can produce some good meals on those old fashion wood burning stoves! Here is a cake recipe that I got from the late Mrs. Coblentz who was an excellent Amish cook; so good, in fact, she wrote a syndicated column about her life sharing recipes from her kitchen. Chocolate Chip Cake is a sheet cake topped with chocolate chips and nuts.CHOCOLATE CHIP CAKE1 3/4 cups sifted flour2 tbsps cocoa1 tsp baking soda1 tsp salt1 cup shortening1 cup boiling water1 tsp vanilla1 cup sugar2 eggs, beaten6-oz chocolate chips1/2 cup chopped hickory nuts (or pecans)Preheat oven to 350 degrees. Grease a 9 x 13 x2-inch baking pan; set aside.Sift together flour, cocoa, salt and baking soda. In a large bowl, cream together the shortening and sugar. Add the eggs and vanilla to the sugar mixture and beat thoroughly. Add the flour mixture and the water alternately mixing batter and beating smooth after each addition. Spoon into the prepared pan and spread batter evenly. Sprinkle the chocolate chips and the nuts over the top of the batter. Bake at 350 degrees for 45 minutes or until a wooden toothpick inserted in the center comes out clean.

NOTE: There is no need to frost this cake; it is delicious as it is. You can, however, use your favorite frosting if desired. It is also good with a dollop of whipped cream on top.Enjoy!
