			<content:encoded><![CDATA[<p>This carrot cake recipe is a little different and easier than some.  You start with a box of yellow cake mix, add water, butter, and egg along with carrots and cinnamon.  Instead of the usual cream cheese frosting we see on carrot cake, this cake is iced with a butter cream frosting.  Don&#8217;t like carrot cake?  We still a cake for you.  Try the Earthquake Cake which is made with a Swiss Chocolate Cake Mix.CINNAMON CARROT CAKE9 oz pkg yellow cake mix1/2 cup water1/4 cup butter, melted1 egg1 cup shredded carrots1 tsp ground cinnamonPreheat oven to 350 degrees.In a large mixing bowl, combine the cake mix, water, butter, and egg. Mix as directed on cake mix package. Stir in the carrots and cinnamon. Pour batter into prepared pan and bake at 350 degrees for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely before frosting.FROSTING:2 cups powdered sugar1/4 cup butter, softened to room temperature3 tbsps milk1/2 tsp vanillaCombine all ingredients in a large mixing bowl. Using an electric mixer, beat at medium speed scraping down the sides of the bowl frequently, until creamy. Spread over cooled cake.Note: For variations you may add 1/4 cup raisins and/or 1/4 cup chopped walnuts to the cake batter. EARTHQUAKE CAKE1 box Swiss Chocolate Cake Mix (can be hard to find, usually available by Duncan Hines)1 cup chopped pecans1 cup coconut1 lb powdered sugar8-oz cream cheese1 stick butter1 tbsp vanillaPreheat oven to 350 degrees.Mix cake according to the package directions. Set aside.Spray bottom only of a 9 x 13-inch baking pan with nonstick cooking spray. Spread pecans in bottom of the pan. Sprinkle the coconut over the pecans. Pour the cake mix mixture over the pecans and coconut. Mix powdered sugar, cream cheese, softened butter, and vanilla. Spoon powdered sugar mixture over the top of the cake mix, one spoonful at a time. Bake at 350 degrees for 45 to 60 minutes.Caution: Cake must be completely cooled before cutting. If cut while warm, cake will be runny. Enjoy! </p>

			<content:encoded><![CDATA[<p>This tasty Carrot-Fruit Bundt Cake is made with a healthier for you dessert in mind.  Most cakes of this type would contain about a cup of oil.  This cake only has a quarter cup of heart healthy canola oil while the remainder of oil is replaced with applesauce.  The carrots add beta-carotene to this dessert.  The glaze is made from fruit juices and honey topped with nuts.  Enjoy a slice of this cake, without regret.CARROT-FRUIT BUNDT CAKE3 cups all-purpose flour2 tsp baking powder1 1/2 tsp baking soda1 1/2 tsp ground cinnamon1/2 tsp salt1/2 cup dried apricots, finely diced1/2 cup dried currants1/4 cup crystallized ginger, finely chopped1 cup granulated sugar1 cup firmly packed brown sugar2 large eggs2 large egg whites1 cup applesauce1/4 cup canola oil4 cups shredded carrots1 tbsp vanilla extractPreheat oven to 350 degrees. Grease and flour a 12-cup bundt pan; set aside.In a large mixing bowl, combine flour, baking powder, baking soda, cinnamon, and salt; set aside.In a small bowl, set aside 2 tablespoons of the apricots and 1 tablespoon of the currants.Combine the remaining apricots, currants, and ginger into flour mixture.In another large bowl, stir together the granulated sugar, brown sugar, eggs, egg whites, applesauce, canola oil, carrots, and vanilla. Stir together well, using the back of the spoon to break up any clumps of brown sugar. Stir the sugar mixture into the flour mixture to blend. Pour the batter into the prepared bundt pan.Bake at 350 degrees for 1 hour and 15 to 20 minutes, until a wooden toothpick inserted in the center of the cake comes out clean. Let the cake cool in the pan on a wire rack for 10 minutes. Turn pan upside down and turn out the cake to cool completely on the wire rack.GLAZE:1 can (6-oz) pineapple juice1/2 cup fresh orange juice2 tbsp honey2 tbsp toasted, chopped pecansWhile cake is cooling, combine the juices and honey in a medium saucepan. Bring the mixture to a boil. Reduce the heat to low and gently boil 12 to 15 minutes until glaze has thickened and has reduced down to about a third of a cup. Pour glaze into a small bowl and cool for 15 minutes. Stir the reserved (from the cake recipe) apricots and currants into the glaze mixture. Spoon the glaze over the cooled cake, pressing fruit so it sticks to the cake. Sprinkle the pecans over the top of the cake, pressing lightly to stick.Yield: 12 servingsNOTE: This cake is even better when baked a day ahead of serving, allowing the flavors to meld. </p>

			<content:encoded><![CDATA[<p>During the holiday season, I like to spend an afternoon making some delicious homemade mini fruit cakes. Making and serving these delectable goodies has been around for centuries. You will usually see them served around the holiday season or at wedding celebrations. You will find that various cultures will have a different twist on the traditional recipe, however, the following recipe is done in the American tradition. When I make this fruit cake, I bake them in a muffin tin or in mini loaf pans. If desired, you can certainly bake them in a regular loaf pan or round cake pan.Fruit Cake Recipe1 1/3 cups granulated sugar1/2 cup butter, softened2 eggs3 cups all-purpose flour3 teaspoons baking powder2 cups eggnog1 1/2 cups mixed candied fruits1 1/2 cups sifted confectioner&#8217;s sugar1/2 teaspoon ground nutmeg1/2 teaspoon ground cinnamonadditional eggnog(optional) candied cherry halvesPreheat oven to 350 degrees.In a large mixing bowl, cream together the granulated sugar with the softened butter until it&#8217;s light and creamy. Beat in both eggs until combined. In another bowl, stir together the flour and baking powder. Slowly stir the flour mixture into the sugar mixture and then beat in the eggnog until all ingredients are well combined. Fold in the chopped candied fruits. If the mixture is stiff, stir by hand.Lightly spray your muffin or mini loaf pans with nonstick vegetable cooking spray. Spoon the batter into your desired pans. Place pans into a preheated 350 degree oven and bake for 20-22 minutes or until they are done and the centers test clean with a toothpick. Remove from the pans and let cool on a wire rack.In a small bowl, combine the confectioner&#8217;s sugar, nutmeg and ground cinnamon. Add in enough eggnog to make the mixture of drizzling consistency. Drizzle the glazed over the cooled fruit cakes.If desired, top the fruit cakes with candied cherry halves for garnishing and store them in an airtight storage container. </p>

			<content:encoded><![CDATA[<p>Rhubarb is one of those foods people either seem to love or hate.  For all you who love rhubarb here are some recipes for you.  For those of you who think you don&#8217;t like it, maybe you should try this Rhubarb Custard Pie or Amish Rhubarb Cake before you write it off completely!  Personally, I am one of those who loves rhubarb.  As a kid growing up in Southern Indiana, I can remember my dad always having two or three huge gardens.  And one of the staples of those gardens was rhubarb.  I loved the cobblers mom made and was always excited when the fresh rhubarb &#8220;came on,&#8221; as the old-timers used to say.  Whether in cobblers, pies, cakes, desserts of other types or mixed in cobblers and pies with other fruits, I loved my rhubarb.  Here are a couple of recipes for you to try.  Linda&#8217;s Rhubarb Custard Pie is basically as stated.  It is a simple recipe from many years ago.  The Amish Rhubarb Cake is another simple cake from a people of simple ways.  And boy, can they cook!LINDA&#8217;S RHUBARB CUSTARD PIE2 cups rhubarb, thinly sliced1 egg, unbeaten1 tbsp flour1 cup sugar1 tbsp water1 9-inch unbaked pie shell.Preheat oven to 375 degrees.Put rhubarb in a medium bowl. Add the sugar and flour to the rhubarb; mix together. Add egg and water. Mix well. Pour mixture into the unbaked pie shell. Bake at 375 degrees for about an hour or until firm. AMISH RHUBARB CAKE1 1/2 cups brown sugar2 cups flour1/2 cup shortening1 cup buttermilk1 egg1/2 tsp baking soda1 1/2 cups fresh rhubarb1/2 tsp saltPreheat oven to 350 degrees. Grease a 9 x 13-inch baking pan; set aside.Combine shortening, brown sugar, and egg; beat until light and fluffy. Combine the flour, baking soda and salt together; add to the egg mixture alternately with the buttermilk, ending with flour. Fold in the rhubarb and mix in well. Pour mixture into the prepared pan and bake at 350 degrees for 30 to 40 minutes until a wooden toothpick inserted in the center comes out clean. Cool before cutting. Serve with whipped cream, if desired. Enjoy! </p>

			<content:encoded><![CDATA[<p>It is possible to still enjoy delicious pies without a lot of hard work or having the oven on for a long period of time.  Try these recipes for Frozen Creamy Strawberry Mini Pies which can be prepared in minutes but needs to freeze for about 4 hours.  The Lemon Dream Pie takes only about 10 minutes to bake and needs to freeze about an hour.  Neither recipe requires using the oven unless you decide to make your own graham cracker crust that needs baking.FROZEN CREAMY STRAWBERRY MINI PIESNote: This is a quick and easy recipe. It does, however, need to freeze for about 4 hours.8-oz pkg cream cheese, softened1 cup cold milk1 pkg (3.4-oz) vanilla flavor instant pudding mix1 1/2 cups thawed frozen whipped topping20 vanilla wafer cookies, coarsely broken into pieces1 cup sliced fresh strawberries1/2 cup strawberry ice cream toppingBeat cream cheese until creamy in a large mixing bowl using an electric mixer. Gradually beat in the milk. Add the dry pudding mix and beat 2 minutes. Stir in the whipped topping, vanilla wafers, and strawberries. Swirl in the ice cream topping.Spoon filling mixture into 12 paper-lined muffin tins. Freeze 4 hours. Remove paper liners before serving. LEMON DREAM PIE </p>
<p>This recipe goes together in about 10 minutes but needs to chill for about an hour.1 tbsp water1 pkg lemonade unsweetened Kool-Aid style drink mix1 tbsp frozen lemonade concentrate, thawed2 pkgs (3-oz each)cream cheese, softened1 cup powdered sugar1 tsp vanilla extract1 1/2 cups heavy whipping cream, whipped1 Graham cracker pie crust2 tbsps seedless raspberry jam, warmed; optional garnishthin lemon slices, optional garnishIn a small mixing bowl, combine the water and the lemonade soft drink mix until the mix is totally dissolved. Stir in the lemonade concentrate. Set aside.In a large bowl, beat the cream cheese, powdered sugar, vanilla, and the soft drink mixture until fluffy. Fold in the whipped cream. Spread the mixture into the Graham cracker crust. Chill for at least an hour until set before cutting. If desired, use the raspberry jam to drizzle on the serving plates before placing the pieces of pie on the plates. Top each slice with a thinly sliced lemon slice that has been slit to twist into a decorative design and add a couple of mint leaves if desired. Enjoy! </p>

<p>FROZEN CRANBERRY DESSERT </p>
<p>1 pkg cranberries, ground (redder if frozen when ground2 cups sugar1 No. 2 can pineapple, crushed, drained1 lb marshmallows, cut-up1 pint whipped creamMix cranberries and sugar together in one bowl. In another bowl, mix pineapple and marshmallows. Let mixtures sit in the two bowls overnight. Mix both mixtures together with 1 pint of whipped cream in the morning. Chill and eat or freeze and eat. Use two large bowls. </p>
<p>CRANBERRY ORANGE BREAD </p>
<p>This is a 1970s recipe from Kraft Foods.3 cups flour3/4 cup sugar1 tbsp baking powder1 tsp salt1/2 tsp baking soda1 cup 100% pure orange juice1/2 cup Squeeze Parkay Margarine2 eggs1 1/4 cups cranberries, coarsely chopped1/2 cup chopped nutsPreheat oven to 350 degrees.In a large mixing bowl, combine flour, sugar, baking powder, salt, and baking soda. Add orange juice, margaarine, and eggs; mix just until moistened. Stir in the cranberries and nuts. Pour batter into a greased and floured 9 x 5-inch loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or until a wooden toothpick inserted in the center comes out clean. </p>
<p>APPLE-CRANBERRY BAKE </p>
<p>2 cups cranberries2 cups peeled, chopped apples3 tbsp flour3/4 cup sugar1 cup instant oats1 tbsp cinnamon1/2 cup chopped pecans1/2 cup packed brown sugar1/2 cup margarine, meltedCombine first three ingredients, tossing to coat. Add sugar, mix well. Place in a baking dish. Blend remaining ingredients and spoon over fruit. Bake, uncovered, for 45 minutes at 350 degrees F. </p>

			<content:encoded><![CDATA[<p>This old fashion Banana Cream Pie will take you back to &#8220;the good ole days&#8221;. It is a simple recipe but it is delicious. If you do not have a favorite pie crust recipe, try this Self-Rising Flour Pie Crust for your pie shell. Busy, in a hurry, or just don&#8217;t like to make pie crust, there are some great ready-made crust in your grocer&#8217;s freezer. </p>
<p>OLD FASHION BANANA CREAM PIE </p>
<p>2 cups milk3 egg yolks, save whites for another use1 tbsp butter1/3 cup flour1/8 tsp salt2/3 cup sugar1 tsp vanilla2 bananas, slicedbaked pastry shell </p>
<p>Scald milk. In the top of a double boiler pan, mix together the flour, salt, and sugar. Slowly add the scalded milk to the flour mixture, stirring constantly until smooth. Cook slowly in the double boiler until smooth and thick, about 15 minutes. Beat egg yolks slightly and add a small amount of the hot mixture to them and beat constantly till smooth. Quickly add the egg mixture to the double boiler and stir constantly. Cook about 3 minutes more. Add the butter and vanilla; stir in to blend well. Remove top of double boiler from the stove. While mixture cools slightly, slice the bananas into the pie shell. Cover bananas with the filling mixture. Serve with dollops of whipped cream or use the egg whites to make a meringue and make this a banana meringue pie. Either way, it is delicious. </p>
<p>SELF-RISING FLOUR PIE CRUST </p>
<p>2 cups self-rising flour2/3 cup solid shortening6 to 8 tbsp water </p>
<p>Cut flour and shortening together until mixture is like coarse crumbs. Add the water, starting with 6 tablespoons, and mix until a stiff dough is formed. Gradually add more of the water, if needed. Divide the dough half. Roll half of the dough to a circle about 1/8-inch thick. Transfer to a pie plate. Add the filling. Roll remaining dough like the first half and use over the top of the filling. Using your fingers, turn the edges of the dough under to seal and press into a scalloped designed edge. Cut small slits in the top crust to allow steam to escape during baking. Bake according to the pie recipe. </p>
<p>Note: To make 1 pie crust for the above pie, divide ingredients in half. Continue instructions above. Fit the crust into a 9-inch pie plate. With a fork, make some holes in the bottom and sides of dough to allow air to escape. Without this, the crust will puff up. Bake at 350 degrees until lightly brown. Check often and if puffing occurs, stick fork into the puffing area. Allow to cool before filling. </p>
