			<content:encoded><![CDATA[<p>Several years ago when our daughter was about 13 years old, we started a holiday tradition together. About 2 weeks before Christmas, we would spend an afternoon together baking gingerbread flavored holiday goodies.When it comes to holiday baking, it just wouldn&#8217;t be complete without making some cute gingerbread man cookies. The follow recipe is pretty easy, although its not quick since you will be hand making your dough, rolling it out and then cutting out your cookie shapes.Gingerbread Man Cookies Recipe2 1/2 sticks butter, softened2/3 cup molasses1/2 cup brown sugar1 egg2 1/2 cups all purpose-flour1 teaspoon ground cinnamon1 tablespoon vanilla extract1/2 teaspoon salt1/2 teaspoon baking soda1/2 teaspoon ground ginger1/4 teaspoon baking powder4 cups confectioner&#8217;s sugar (powdered sugar)4 tablespoons milkIn a large bowl, combine 3/4 cup softened butter, molasses, brown sugar and egg together using an electric mixer on medium speed. Beat until the mixture is creamy and smooth. Add in the flour, spices, 1 teaspoon vanilla extract, salt, baking soda and then the baking powder. Beat mixture at low speed with an electric mixture until all ingredients are well combined. Place mixture in a large zipper close plastic bag and place into the refrigerator for 4 hours.Preheat oven to 350 degrees. Line two baking sheets with a silicone nonstick baking mat or lightly grease them. Split cookie dough into three equal sections. Roll out the dough on a lightly floured dough board until it measures approximately 1/4&#8243; thick. Use a purchased gingerbread man cookie cutter and cut out your shapes. Place shapes onto your baking sheets and bake in the oven for 6-8 minutes or until done. Remove from oven and cool on a wire rack.Frosting RecipeIn a medium-sized mixing bowl, combine the confectioner&#8217;s sugar, milk, remaining 1/2 cup of butter and 2 teaspoons of vanilla extract. Use an electric mixer and beat until mixture is creamy and fluffy. If desired, you can tint the frosting with food color. Decorate your completely cooled gingerbread man cookies with frosting and set aside to dry.Store your cookies in an airtight cookie canister. These cookies will keep for 2-3 weeks if properly stored. </p>

It’s the favorite cookie of many people, and the New York Times even produced an article about them which is still getting ‘buzz’. It’s no surprise that this cookie is such a big favorite, it’s very down-to-earth, and is often a comfort food. It’s also easy to make at home, if you don’t try to get overly exotic with it. </p>
<p>Chocolate chip cookies come in two basic textures, chewy and crispy. This recipe is for the chewiest, most melt-in-your-mouth delicious chocolate chippers you’ve had. If you like crispy cookies, stay far away because these bake up puffy, light and never oily. The soft moist cookies are full of big gooey chocolate chips. They taste fantastic hot from the oven, and keep well in sealed containers. However, because they are moist and rich-tasting with no preservatives, they should be refrigerated after a few days to prevent mold. (Much like a bakery-fresh moist bread, these cookies need care to not go stale) </p>
<p>Extra fact:Most cookie recipes only make cookies of ONE size. If you attempt to make the cookies at a size that is not described in the original recipe, you’ll run into problems such as undercooking while edges burn, or over-done cookies despite the bake-time. These cookies can easily be made in ANY of THREE sizes! </p>
<p>From ¼ cup scoops of dough at once for giant cookies…to1.5 tablespoon sized medium cookies…and1 .5 teaspoon size regular cookies </p>
<p>With this recipe the size is totally up to you! Just adjust the baking time accordingly. (seen below) A big chocolate chip cookie can make a nice ‘thank you’ gift for someone you know. When it’s home made, it really shows you care…and you only need to spend minutes making them! </p>
<p>How could a chocolate chip cookie get even better?What if it had HALF the fat of an ordinary cookie?What if it tasted richer and chewier than an ordinary cookie?And what if it had fiber, and healthy nutrients as well? </p>
<p>The seemingly impossible becomes possible with this fantastic chocolate chip cookie recipe. In one easy batch, these could become your new favorites. Chia Gel is your secret to a better tasting, lower fat cookie that has extra nutrition. You can find the recipe for Chia Gel below. </p>
<p>Ultra Chewy Chia Chocolate Chip Cookies </p>
<p>What you’ll need: </p>
<p>Dry Ingredients2 cups flour½ heaping tsp baking soda ½ tsp salt¼ cup white sugar1 cup brown sugar2 cups semi-sweet chocolate chips </p>
<p>Wet Ingredients8 tbsp butter (works best if melted first)4 tbsp chia gel¼ cup apple sauce (unsweetened)1 tbsp vanilla1 whole egg1 egg yolk only </p>
<p>First, pre-heat the oven to 325 degrees and grease your cookie sheets. Mix the melted butter, and both sugars until well blended. Then add the vanilla, applesauce, whole egg and egg yolk. Stir again until thoroughly combined. Last add in your chia gel and stir again. In another bowl, combine the rest of the dry ingredients except the chocolate chips. (Flour, baking soda, salt) Once the dry ingredients are mixed, add them slowly to the wet ingredients with a wooden spoon. Stir only until just combined. Last, add in the 2 cups chocolate chips. </p>
<p>Suggestion:If you’re making large or medium size cookies, you can use Jumbo chocolate chips or chocolate chunks.If you’re making regular or small size cookies, regular-size chocolate chips work best </p>
<p>Sizes:If you use ¼ cup batter per cookie bake for about 15 minutes (Large)If you use 1.5 tbsp batter per cookie bake for about 12 minutes (Medium)If you use 1.5 tsp batter per cookie bake for about 10 minutes (regular/small) </p>
<p>When done baking, the cookies will become golden brown. The edges may appear lightly toasted but the centers will still be soft and puffy. Be careful not to over bake. </p>
<p>Make Chia Gel (a video) </p>
<p>Chia gel is super easy to make, and it’s the key to the healthy kick these cookies pack. Due to its unique gelling property, it replaces half of the butter in this recipe, without changing the flavor. Chia seeds have no flavor of their own when you make the gel with filtered water. You won’t even know they’re in the cookies. </p>
<p>1 tbsp dry chia seeds9 tbsp filtered water </p>
<p>In a seal-able container, simply scoop in the chia seeds and add the 9 tbsp filtered water. Stir with a fork to prevent clumping, and let stand for about 10 to 15 minutes. The seeds will each have formed a thick gel around them. This gel can now be used to replace up to half the butter or oil in almost any baked recipe. </p>

			<content:encoded><![CDATA[<p>One of the easiest things to learn in the kitchen is baking cookies.  Most of us learned to bake cookies as kids.  I vividly remember my mother allowing me to &#8220;help&#8221; her&#8230;God bless her for her patience&#8230;bake cookies.  I was so excited when I was allowed to take on the project on my own.  I remember coming home from a junior high home economics class with my chocolate chip cookie recipe in hand.  I couldn&#8217;t wait to tell her how excited I was to make these for my family.  She looked at my recipe and asked if I was planning to do that now.  Of course I was.  She looked around her perfectly clean kitchen, I realized later that she had just cleaned the kitchen and mopped the floor, and told me I should get right to it.  Then she told me I needed to remember I would have to clean up my mess.  (Treat her kindly for me, God.  She deserves it!)  So have patience with your youngsters and get them in the kitchen and let them help you make these cookies.  Someday you will be gone, but they will always have the memories of these times spent with you&#8230;even when they are grandparents themselves! </p>
<p>OATMEAL RAISIN CINNAMON COOKIES </p>
<p>1 cup butter, softened1 cup light brown sugar, packed1/3 cup granulated sugar2 eggs1 1/2 tsps vanilla extract1 1/2 cups all-purpose flour1 tsp baking soda2 1/2 cups quick cooking oats1 pkg (10 oz) cinnamon chips (I prefer HERSHEY&#8217;S)3/4 cup raisinsPreheat oven to 350 degrees. </p>
<p>In a medium mixing bowl, beat together the butter, brown sugar, and granulated sugar until creamy. Add the eggs and vanilla; beat well. In a small bowl, combine the flour and baking soda. Add to the butter mixture, beating well. Stir in the oats, cinnamon chips, and raisins. The batter will be stiff. Drop by heaping teaspoons onto ungreased cookie sheets. Bake 10 to 12 minutes or until lightly browned. Cool 1 minute on the cookie sheet before removing to cool completely on wire racks.Yield: Approximately 4 dozen </p>

I usually bake 12-14 different varieties.I would like to share a few cookie making tips with you today.1. Unbaked dough can be covered and refrigerated for up to 24 hours. Dough can also be frozen for up to 9 months.2. Dip cookie cutters in flour or confectioner&#8217;s sugar, shake off excess before cutting out cookies.3. Line your baking sheets with Parchment Paper or a Silicone Baking Mat to make clean up easier. 4. Spray your spoon with non-stick cooking spray. This will help the dough to slide off easier.5. Spray your beater blades with non-stick cooking spray to help prevent dough from sticking on them.6. Remove your cookies from the oven 1-2 minutes before the recommended baking time. They will finish baking on the baking sheet.Sugar Cookies 5 c. flour 2 tsp. vanilla 1 tsp. baking powder 2 c. sugar 3/4 tsp. baking soda 2 eggs 1 1/2 c. milk 1 c. butter Cream sugar and butter together. Add vanilla and eggs, beat until well blended. Stir in milk, baking soda and baking powder. Slowly mix in flour. Drop by tablespoonful onto greased cookie sheet. Sprinkle on any desired toppings. Bake for 350 degrees for 12 minutes.Chewy Chocolate Chip Cookies 1 c. shortening1 c. butter 2 c. brown sugar 1 tsp. vanilla 4 c. flour 2 tsp. baking soda 1 tsp. salt 1 c. sour cream or buttermilk 1 lg. package of chocolate chips Mix all ingredients together. Drop by the teaspoonful onto a baking sheet. Bake at 350 degrees for 10-12 minutes. Peanut Butter Cookies 3/4 c. creamy peanut butter 1/2 c. shortening 1 1/4 c. light brown sugar 3 tbsp. milk 1 tbsp. vanilla 1 egg 1 3/4 c. flour 3/4 tsp. salt 3/4 tsp. baking soda Combine peanut butter, shortening, light brown sugar, milk and vanilla in a large bowl. Beat at medium speed until blended. Add egg. Beat again. Combine flour, salt, and baking soda at low speed until blended. Drop by teaspoonful onto baking sheet. Flatten slightly in crisscross pattern with tines of a fork. Bake at 350 degrees for 8 minutes.Pecan Sandies 1 c. butter or margarine 1/4 c. granulated sugar 2 tsp. vanilla 2 c. all-purpose flour 1 c. chopped pecans 1/4 c. confectioner&#8217;s sugar Beat butter for 30 seconds; add granulated sugar and beat till fluffy. Add vanilla and 2 tsp. water; beat well. Stir in flour and pecans. Shape into 1&#8243; balls. Place on a ungreased cookie sheet. Bake in a 325 degree oven for about 20 minutes. Cool completely. Sprinkle cooled cookies with a light coating of confectioner&#8217;s sugar.Sand Tarts 1 c. butter 1 1/2 c. sugar 2 eggs 1 tsp. vanilla 1/2 tsp. salt 1 tbsp. milk 3 c. flour 1 tsp. baking powder egg white In one bowl, combine flour, baking powder and salt. In second bowl, cream butter and sugar, then add eggs, vanilla, salt and milk. Mix together. Now add flour mixture. Chill overnight. Roll thin and cut with cookie cutters. Before baking, have egg white in dish. Use pastry brush and lightly brush over cookies. Then sprinkle with desired colored sugars. Bake at 350 degrees for 5-8 minutes. </p>

			<content:encoded><![CDATA[<p>Here are a couple of great cookie recipes from my vintage recipe collection.  The first is for an ethnic cookie&#8211;Swedish Heirloom Cookies.  These cookies are not only tasty but would be great as holiday cookies as they can be decorated to suit the occasion.  The other is a Banana Oatmeal Cookie that is a healthy alternative to the usual cookies containing candy bits and chips.  Get out the baking sheets and bake up a batch today.  You&#8217;ll be glad you did!  Yummy! </p>
<p>SWEDISH HEIRLOOM COOKIES </p>
<p>I could not find a date on the old cookbook from where I first got this recipe. It did have a price of 15 cents factory printed on the front cover so it is obviously very old.Bake at 325 degrees for 15 to 18 minutes.Cream&#8230;&#8230;1 cup butter. Gradually add 1 cup unsifted confectioners&#8217; sugar and 1/2 tsp salt, creaming well.Add&#8230;&#8230;..1 1/4 cups almonds, ground, and 1 tablespoon vanilla.Blend in&#8230;2 cups sifted all-purpose flour* gradually, mix thoroughly.Shape&#8230;&#8230;dough into balls or crescents, using a rounded teaspoonful for each cookiePlace on ungreased baking sheets. If desired,sprinkle with colored candiesBake&#8230;&#8230;.in 325 degree oven 15 to 18 minutes. Cookies will not be brown when done.*If you are using self-rising flour (sold in parts of the south), omit the salt.If you did not decorate the cookies, you may roll them in confectioners&#8217; sugar while they are warm.Makes about 4 1/2 dozen. </p>
<p>BANANA OATMEAL COOKIES </p>
<p>Go back to this old-fashioned recipe for a cookie to make for the kids. It is tasty, nutrious, and much better for your family than chocolate chips and/or candy bits.3/4 cup butter, room temperature1/2 cup packed brown sugar1 1/2 cups flour1 tsp salt1/2 tsp cinnamon1 cup oats, dry2 large ripe bananas, coarsely mashed1/2 cup sugar1 egg, room temperature1 tsp baking powder1/2 tsp nutmeg1/2 tsp cloves1 tsp vanilla Preheat oven to 375 degrees. Grease cookie sheets. In a large mixing bowl, cream butter and both sugars. Add egg and beat until fluffy. Sift together flour, baking powder, salt and spices; add to butter mixture and mix well. Stir in oats, vanilla, and banana. Drop by tablespoon two inches apart on cookie sheets. Bake 12 to 15 minutes until golden in color. Cool on a wire rack. </p>

			<content:encoded><![CDATA[<p>My great aunt who is 83 years old has been baking and cooking all of her life. When I was a little girl, I could remember spending countless hours with her in the kitchen and learning just about everything I know today that pertains to baking. </p>
<p>This is a recipe she started making back in the 1960&#8242;s and to this day, its one of our family&#8217;s favorite cookie recipes. Back in the 1960&#8242;s money was tight so women used to whip up recipes using the common ingredients they usually had on hand. </p>
<p>If you love lemon flavored cookies, then give this recipe a try. </p>
<p>Lemon Butter Cookies </p>
<p>1/2 c. butter, softened 1/2 c. sugar 1 egg 1 1/2 c. flour 2 tbsp. fresh lemon juice 1 tsp. grated lemon peel 1/2 tsp. baking powder 1/8 tsp. salt additional sugar </p>
<p>*note* I like a lot of lemon flavor, so when I make Auntie&#8217;s recipe, I increase the lemon juice to 4 tablespoons and I always use fresh lemon juice that I personally hand squeeze. (I don&#8217;t use the bottled lemon juice). </p>
<p>Beat butter and sugar in a large bowl with mixer at medium speed until creamy. Beat in egg until light and fluffy. Mix in flour, lemon juice, lemon peel, baking powder and salt. Wrap in plastic wrap, refrigerate for 2 hours or until firm. (make sure you refrigerate the dough for a minimum of 2 hours but no longer than for 4 hours). </p>
<p>Preheat oven to 350 degrees. Roll dough, a small portion at a time on a well floured surface to 1/4&#8243; thickness. Keep remaining dough in the refrigerator. Cut dough with 3&#8243; round cookie cutter. (you can also use a round biscuit cutter which I find easier to use than a cookie cutter). </p>
<p>Transfer cookies to a ungreased cookie sheet. Sprinkle with granulated sugar. I lined my cookie sheet with a Non-Stick Silicone Baking Mat and I am so glad that I did! They just slid off the mat when they were done and they were evenly baked. </p>
<p>Bake 8-10 minutes or until edges are lightly browned. Cool for 1 minute on cookie sheet before removing them to finish cooling on a wire rack. Store in an airtight container. </p>
<p>Additional Note: The thinner you roll out the dough, the less baking time it will need. So if you like thick cookies, roll out your dough thicker than described above but you will need to increase your baking time by 1-2 minutes. </p>

Not only is the stove-top method quick and easy, but it saves on heating up your kitchen.I find it best to line my countertop or tabletop, with some parchment paper. You will want to &#8216;drop&#8217; your cookies onto the parchment paper or a non-stick baking mat, to let them cool. After they have cooled to room temperature, store them in an airtight container.Here are 5 of my favorite no-baking involved cookie recipes.Raisin No-Bakes2 c. raisins 2 c. Chinese noodles 1/2 c. creamy peanut butter 1/4 c. honey Mix raisins and Chinese noodles in bowl. Put peanut butter and honey in a small saucepan. Stir over medium heat until smooth and hot (no need to boil). Pour over raisin mixture, toss with a fork until evenly coated. Shape rounded spoonfuls into size of golf balls pressing gently with fingers. Let cool. Chocolate Cracker Cookies Round Crackers (like Ritz)1 1/2 lbs. almond bark peanut butter 12 oz. bag of chocolate chips Spread peanut butter on crackers. Top with second cracker. Melt almond bark with chocolate chips. Dip sandwich cookies into the chocolate mixture using tongs. Drop onto waxed paper and let cool.Chow Mein Bites 1 c. peanut butter 12 oz. pkg. butterscotch chips 4 c. miniature marshmallows 4 c. chow mein noodles Place peanut butter and butterscotch chips in the top of a double boiler. Heat over hot water until melted. Combine with marshmallows and chow mein noodles. Mix well and drop by spoonfuls onto waxed paper. Chill for 1-2 hours.Sunshine 1 box vanilla wafers 1 stick butter, softened 1 sm. can frozen orange juice 1 box of powdered confectioners sugar shredded coconut Crush vanilla wafers to make crumbs. Mix with a stick of butter, orange juice, and sugar. Roll in small balls about the size of walnuts; roll in shredded coconut. Chill for 1-2 hours, until firm.Chocolate Oatmeal No Bakes 2 c. sugar1/2 c. cocoa1/4 c. margarinepinch of salt1/2 c. milk3 c. quick oats (oatmeal)1 c. creamy peanut butter1 tsp. vanilla extractCombine the first 5 ingredients in a large pan and boil for 1 minute, stirring often. Turn off the heat and stir in the oatmeal, peanut butter and vanilla. Drop by the spoonful onto wax paper. Let them cool and they will harden as they cool. </p>

<p>3 cups flour</p>
<p>1 tsp. soda</p>
<p>11/2 cups sugar</p>
<p>1 cup butter</p>
<p>4 eggs unbeaten</p>
<p>Directions</p>
<p>Cream the butter and sugar together. Add the eggs, one at a time, and mix well. Add the flour gradually and knead into a soft dough. Roll thin, cut into small round shapes and sprinkle with sugar. Bake at 400° F. for eight to ten minutes.</p>
<p>Soft Sugar Cookies</p>
<p>This is another cookie recipe that is said to be very old Dutch. </p>
<p>Ingredients :</p>
<p>Sift together</p>
<p>4 cups flour 2 eggs unbeaten</p>
<p>1/2 tsp. salt 1 cup lard</p>
<p>1 tsp. soda 21/2 cups sugar</p>
<p>1 cup buttermilk</p>
<p>1 tsp. Vanilla</p>
<p>Direction :</p>
<p>Blend the lard into the flour. Be careful to keep the mixture cold. Mix in the sugar. Add the eggs, buttermilk and flavoring and mix quickly. Knead slightly. Roll medium thick, cut into large cookies and bake at 450° F. about twelve minutes.</p>
<p>Zucker Plaetzchen</p>
<p>(Sugar Cookies)</p>
<p>Ingredients:</p>
<p>Dissolve in</p>
<p>1 tbsp. hot water</p>
<p>1 tsp. soda</p>
<p>1 tsp. cinnamon</p>
<p>3 cups flour sifted</p>
<p>2 cups brown sugar</p>
<p>3/4 cup butter</p>
<p>creamed</p>
<p>2 eggs unbeaten</p>
<p>Direction :</p>
<p>Add the sugar to the butter and cream ten minutes. Add the eggs, one at a time, and blend in well. Add the flour, the soda and cinnamon and knead into a smooth dough. Roll thin, cut into small cakes and bake at 400° F. until light brown.</p>
