			<content:encoded><![CDATA[<p>While many variations on the crab cake have been developed over the years, traditionalists still prefer the basic Maryland crab cake.  It simple flavor combinations, and the ease and quickness of the recipe have made it a very enjoyable dish to prepare and eat. </p>
<p>Like most recipes, the higher the quality of ingredients you start with, the better the final product will be.  Although crab meat is not inexpensive, you will enjoy the taste you get with high quality crab meat.  Along with the quality of the crab meat, you will get better flavors from fresher ingredients. </p>
<p>The crab cakes recipe itself is very simple.  There are not many ingredients, which allows the flavor of the crab meat to come through, and not get buried by the other ingredients.  The recipe itself starts with the crab meat. This typically lump crab meat, although some recipes will have you mix lump and claw meat together.  This is mixed with saltine cracker crumbs, and a dressing made of eggs, salt, finely ground onion, and a dash of cayenne pepper. </p>
<p>These ingredients are carefully mixed together. You only need to mix the ingredients until they bind and you are able to form patties.  Over mixing will break up the crab meat too much, and you will lose much of the desired texture. </p>
<p>Once the ingredients are mixed, form them into patties that are about ¾ to 1-inch thick.  If you are making crabcakes for appetizers make a 2 ounce patty.  For an entrée, make 4 ounce patties.  When the patties are formed refrigerate them for about 2 hours before cooking so they will set and be firm enough not to fall apart when cooking. </p>
<p>In a frying pan or skillet you can sauté the crab cakes in clarified butter until they are golden brown.  You can make clarified butter by heating butter until it is almost to the boiling point, Separate the solids from the top, and use the clear butter at the bottom to cook with.  This allows you to sauté at a higher temperature without your butter burning in the pan. </p>
<p>Serve your crab cakes warm to your hungry guests and watch them enjoy this traditional American classic.  It is quick and easy, and best of all, it is delicious. </p>

			<content:encoded><![CDATA[<p>Bundt cake recipes are cake recipes that use a &#8220;bundt&#8221; cake pan or a round baking pan that with a hole in the middle and ridged, decorated sides. Bundt cake recipes use a dense cake such as a butter or pound cake recipe. These cakes are sturdy and last well. Recipes often call for a simple glaze or fruit topping. The name Bundt comes from the German word bund, which means &#8220;a gathering of people.&#8221;<br />
Bundt cake recipes have grown in popularity since 1966 when a &#8220;Tunnel of Fudge&#8221; cake recipe used a bundt pan to win second place at a Pillsbury sponsored baking contest. Bundt cake recipes have since been quite popular and bundt cake pan sales have increased.<br />
Because bundt cakes are baked in these intricate pans, there can be mishaps when turning the pan upside down and seperating the cake from the pan, ruining a wonderful cake. These mishaps can be avoided by following a few simple steps.<br />
In order to stop your bundt cake from sticking when you turn it upside down you must prepare the pan by brushing it with vegetable shortening and a dusting of flour, alternatively use a non-stick spray with flour, stay away from sprays that contain lecithin as is will leave a residue. If you use the first method, tap the pan lightly over the sink to get rid of surplus flour.<br />
You want the structure of your cake to be consistent throughout so you must avoid trapping air bubbles in the batter. This can be done by pouring the batter slowly, allowing it to fill the crevices of the bundt pan. It is prudent to only fill the pan ¾ of the way to allow the batter to rise. Use a spatula to press batter into the detailed walls of the bundt pan. Lightly wobbling the filled pan and tapping it against the counter will allow any remaining air bubbles to escape.<br />
The cake should be placed in the center of the oven to allow for air circulation and even cooking. If the pan is dark colored it will absorb heat more quickly and the cooking temperature should be reduced 25 degrees fahrenheit from what the recipe calls for.<br />
Once the cake has finished baking the correct time, let it cool for 10 minutes. If you turn the cake over now and it is stuck to the pan it may break so be sure to wobble the pan to indicate if it is loose. The cake should move freely from side to side letting you know it is ready to turn over. If the cake is sticking around the sides use a butter knife to gently pry the cake from the sides. Then turn the pan over on to a cooling rack and allow to fully cool.  </p>

			<content:encoded><![CDATA[<p>This Bundt cake is an excellent cake to take to picnics, pitch-in meals, church socials, etc.  This Lemon Cake recipe uses cornmeal and buttermilk, making it different than the usual lemon cake.  It is so good it has been dubbed as a &#8220;Lick the Platter Clean&#8221; cake.  Make it soon and find out for yourself how quickly it will disappear.LICK THE PLATTER CLEAN LEMON CAKEVegetable oil spray with flour2 1/2 cups all-purpose flour1/2 cup yellow cornmeal2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 cup unsalted butter1 3/4 cups sugar1 tbsp grated lemon peel1/4 cup lemon juice4 large eggs1 cup buttermilkPreheat oven to 325 degrees. Coat a 10-cup Bundt pan with the vegetable oil spray; set aside.In a medium mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt. In a large mixing bowl, beat butter, sugar, lemon peel, and lemon juice with medium speed of electric mixer until light and fluffy. Beat in the eggs, one at a time until blended. Turn mixer to low and alternately beat in the flour mixture and buttermilk until the batter smooth. Scrape into the prepared pan; level the top with a spatula. Bake in the 325 degree oven 55 to 65 minutes until a wooden pick inserted in the center comes out clean. Remove from oven and cool in the pan on a wire rack for 5 minutes.Sugar Glaze:1 cup sugar1/3 cup lemon juiceWhile cake cools, whisk together the sugar and lemon juice in a small bowl just until combined. (Sugar will not be totally dissolved.) Invert cake from the pan onto the rack. Place a baking sheet under the under the rack. Using a pastry brush, brush the glaze all over the hot cake until absorbed (sugar crystals will still be evident.) Transfer to a serving plate and cover. Let rest several hours or overnight before serving. Cake may be kept at room temperature for up to 4 days. Cut into 20 thin slices. Per slice: 282 cal, 44 g carbs, 4 g pro, 1 g fiber Enjoy! </p>

Serve hot. Makes 4 small servings. </p>
<p>Grilled Steak Recipe: </p>
<p>Ingredients: 1 tablespoon Steak Seasoning 1 tablespoon brown sugar, light 1 teaspoon Onion Powder 1/2 teaspoon Oregano Leaves 1 1/2 pounds steakMethod: 1.Blend first four ingredients. 2.Rub over surface of steak. 3.Grill over indirect or medium heat until done. </p>
<p>Ingredients: 1 cup sugar 4 heaping tablespoons cocoa 2 teaspoons baking soda 1 cup mayonnaise Beat all of these ingredients together until smooth and well blended.Add: 1 cup of cold water 2 cups of sifted flour 1 teaspoon vanillaMethod: 1.Beat again until well blended and smooth. 2.Pour into a well greased 9 x 13 baking pan or 2 nine inch cake pans. 3.Bake for about 30 minutes at 350F or until done to the touch. 4.Frost with your favorite frosting. </p>

			<content:encoded><![CDATA[<p>This carrot cake recipe is a little different and easier than some.  You start with a box of yellow cake mix, add water, butter, and egg along with carrots and cinnamon.  Instead of the usual cream cheese frosting we see on carrot cake, this cake is iced with a butter cream frosting.  Don&#8217;t like carrot cake?  We still a cake for you.  Try the Earthquake Cake which is made with a Swiss Chocolate Cake Mix.CINNAMON CARROT CAKE9 oz pkg yellow cake mix1/2 cup water1/4 cup butter, melted1 egg1 cup shredded carrots1 tsp ground cinnamonPreheat oven to 350 degrees.In a large mixing bowl, combine the cake mix, water, butter, and egg. Mix as directed on cake mix package. Stir in the carrots and cinnamon. Pour batter into prepared pan and bake at 350 degrees for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely before frosting.FROSTING:2 cups powdered sugar1/4 cup butter, softened to room temperature3 tbsps milk1/2 tsp vanillaCombine all ingredients in a large mixing bowl. Using an electric mixer, beat at medium speed scraping down the sides of the bowl frequently, until creamy. Spread over cooled cake.Note: For variations you may add 1/4 cup raisins and/or 1/4 cup chopped walnuts to the cake batter. EARTHQUAKE CAKE1 box Swiss Chocolate Cake Mix (can be hard to find, usually available by Duncan Hines)1 cup chopped pecans1 cup coconut1 lb powdered sugar8-oz cream cheese1 stick butter1 tbsp vanillaPreheat oven to 350 degrees.Mix cake according to the package directions. Set aside.Spray bottom only of a 9 x 13-inch baking pan with nonstick cooking spray. Spread pecans in bottom of the pan. Sprinkle the coconut over the pecans. Pour the cake mix mixture over the pecans and coconut. Mix powdered sugar, cream cheese, softened butter, and vanilla. Spoon powdered sugar mixture over the top of the cake mix, one spoonful at a time. Bake at 350 degrees for 45 to 60 minutes.Caution: Cake must be completely cooled before cutting. 			<content:encoded><![CDATA[<p>This tasty Carrot-Fruit Bundt Cake is made with a healthier for you dessert in mind.  Most cakes of this type would contain about a cup of oil.  This cake only has a quarter cup of heart healthy canola oil while the remainder of oil is replaced with applesauce.  The carrots add beta-carotene to this dessert.  The glaze is made from fruit juices and honey topped with nuts.  Enjoy a slice of this cake, without regret.CARROT-FRUIT BUNDT CAKE3 cups all-purpose flour2 tsp baking powder1 1/2 tsp baking soda1 1/2 tsp ground cinnamon1/2 tsp salt1/2 cup dried apricots, finely diced1/2 cup dried currants1/4 cup crystallized ginger, finely chopped1 cup granulated sugar1 cup firmly packed brown sugar2 large eggs2 large egg whites1 cup applesauce1/4 cup canola oil4 cups shredded carrots1 tbsp vanilla extractPreheat oven to 350 degrees. Grease and flour a 12-cup bundt pan; set aside.In a large mixing bowl, combine flour, baking powder, baking soda, cinnamon, and salt; set aside.In a small bowl, set aside 2 tablespoons of the apricots and 1 tablespoon of the currants.Combine the remaining apricots, currants, and ginger into flour mixture.In another large bowl, stir together the granulated sugar, brown sugar, eggs, egg whites, applesauce, canola oil, carrots, and vanilla. Stir together well, using the back of the spoon to break up any clumps of brown sugar. Stir the sugar mixture into the flour mixture to blend. Pour the batter into the prepared bundt pan.Bake at 350 degrees for 1 hour and 15 to 20 minutes, until a wooden toothpick inserted in the center of the cake comes out clean. Let the cake cool in the pan on a wire rack for 10 minutes. Turn pan upside down and turn out the cake to cool completely on the wire rack.GLAZE:1 can (6-oz) pineapple juice1/2 cup fresh orange juice2 tbsp honey2 tbsp toasted, chopped pecansWhile cake is cooling, combine the juices and honey in a medium saucepan. Bring the mixture to a boil. Reduce the heat to low and gently boil 12 to 15 minutes until glaze has thickened and has reduced down to about a third of a cup. Pour glaze into a small bowl and cool for 15 minutes. Stir the reserved (from the cake recipe) apricots and currants into the glaze mixture. Spoon the glaze over the cooled cake, pressing fruit so it sticks to the cake. Sprinkle the pecans over the top of the cake, pressing lightly to stick.Yield: 12 servingsNOTE: This cake is even better when baked a day ahead of serving, allowing the flavors to meld. </p>

			<content:encoded><![CDATA[<p>If you love chocolate cake you need to add this Chocolate Spice Cake to your recipe collection as one can never have too many chocolate cake recipes.  This cake is different because of the spices&#8211;just enough to make it special without being overpowering.  Surprise your family and friends with this different chocolate cake.  It&#8217;s up to you whether or not to give away your secret for this delicious cake.  We won&#8217;t tell what spices it contains or that it is moist because of the applesauce!  This cake is just as yummy as a glazed Bundt cake or as a frosted sheet cake.CHOCOLATE SPICE CAKE1 3/4 cups unsifted all-purpose flour1 3/4 cups sugar1/3 cup cocoa2 tsp baking soda1 tsp cinnamon1/2 tsp nutmeg1/4 tsp allspice1/8 tsp salt1 1/2 cups applesauce1/2 cup milk1/2 cup butter, melted1 tsp vanilla extract1/2 cup raisins1 cup chopped nuts, optionalVanilla glazeIn a large mixing bowl, combine flour, sugar, cocoa, baking soda, cinnamon, nutmeg, allspice, and salt. Stir in the applesauce, milk, butter, and vanilla extract; combine thoroughly. Add raisins and the nuts, if desired.Pour batter into greased and floured 9-cup Bundt pan OR a 9 x 13-inch baking pan. Bake at 350 degrees for 55 to 60 minutes if using a Bundt pan. If using an oblong pan bake for 40 to 45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes; remove from Bundt pan and cool on a wire rack. Leave oblong cake in pan.Glaze Bundt cake with Vanilla Glaze or frost oblong cake as desired.VANILLA GLAZE:1 tbsp softened butter1 cup powdered sugar1/2 tsp vanilla1 to 2 tbsp milkCombine butter, powdered sugar, and vanilla. Add milk gradually until glaze is smooth and of desired consistency. Drizzle over the Bundt cake. Enjoy! </p>
