I-MORSEL MUFFINSThis recipe is from my old hometown newspaper when I was a kid growing up in Southern Indiana many, many years ago!2 cups all-purpose flour6-ounces semisweet chocolate mini-morsels1/2 cup chopped pecans1 tbsp baking powder1/2 tsp salt3/4 cup milk6 tbsps butter, melted1/4 cup firmly packed brown sugar2 eggs1 tsp vanilla extractPreheat oven to 400 degrees.In a large bowl, combine the flour, mini-morsels, nuts, baking powder, and salt. In a small bowl, blend the milk, melted butter, brown sugar, eggs, and vanilla until well blended. Pour the liquid ingredients into the flour mixture. Stir together just until the flour mixture is moistened (it is okay if the batter is lumpy). Spoon the mixture into 12 greased muffin cups. Bake for 20 minutes. Cool in the pans for 5 minutes, then remove. POPPY SEED BREADThis recipe is from an old childhood acquaintance. I have not tried it myself since I am diabetic.1 box yellow cake mix1 box instant coconut pudding and pie filling mix4 eggs1 cup water1/2 cup oil1 box poppy seedsPreheat oven to 350 degrees.Mix all ingredients together and pour into 2 greased and lightly floured loaf pans. Bake at 350 degrees for 45 to 50 minutes. Enjoy!
