How to Make Quick and Easy Pies for Delicious Desserts

It is possible to still enjoy delicious pies without a lot of hard work or having the oven on for a long period of time.  Try these recipes for Frozen Creamy Strawberry Mini Pies which can be prepared in minutes but needs to freeze for about 4 hours.  The Lemon Dream Pie takes only about 10 min
utes to bake and needs to freeze about an hour.  Neither recipe requires using the oven unless you decide to make your own graham cracker crust that needs baking.FROZEN CREAMY STRAWBERRY MINI PIESNote: This is a quick and easy recipe. It does, however, need to freeze for about 4 hours.8-oz pkg cream cheese, softened1 cup cold milk1 pkg (3.4-oz) vanilla flavor instant pudding mix1 1/2 cups thawed frozen whipped topping20 vanilla wafer cookies, coarsely broken into pieces1 cup sliced fresh strawberries1/2 cup strawberry ice cream toppingBeat cream cheese until creamy in a large mixing bowl using an electric mixer. Gradually beat in the milk. Add the dry pudding mix and beat 2 minutes. Stir in the whipped topping, vanilla wafers, and strawberries. Swirl in the ice cream topping.Spoon filling mixture into 12 paper-lined muffin tins. Freeze 4 hours. Remove paper liners before serving. LEMON DREAM PIE

This recipe goes together in about 10 minutes but needs to chill for about an hour.1 tbsp water1 pkg lemonade unsweetened Kool-Aid style drink mix1 tbsp frozen lemonade concentrate, thawed2 pkgs (3-oz each)cream cheese, softened1 cup powdered sugar1 tsp vanilla extract1 1/2 cups heavy whipping cream, whipped1 Graham cracker pie crust2 tbsps seedless raspberry jam, warmed; optional garnishthin lemon slices, optional garnishIn a small mixing bowl, combine the water and the lemonade soft drink mix until the mix is totally dissolved. Stir in the lemonade concentrate. Set aside.In a large bowl, beat the cream cheese, powdered sugar, vanilla, and the soft drink mixture until fluffy. Fold in the whipped cream. Spread the mixture into the Graham cracker crust. Chill for at least an hour until set before cutting. If desired, use the raspberry jam to drizzle on the serving plates before placing the pieces of pie on the plates. Top each slice with a thinly sliced lemon slice that has been slit to twist into a decorative design and add a couple of mint leaves if desired. Enjoy!
